  • 1 cup shredded cheese (e.g., cheddar) Go for sharp cheddar for an extra punch of flavor!
  • 1 medium onion, chopped Sautéing them beforehand really brings out that natural sweetness.
  • Salt and pepper to taste Season generously!
  • Optional: vegetables like carrots or green beans Add in seasonal veggies to sneak in some greens and extra color.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large skillet, cook the ground beef and chopped onion over medium heat, stirring occasionally. Add a pinch of salt and pepper.
  • In a greased baking dish, lay half of the sliced potatoes on the bottom.
  • Spoon half of your savory beef mixture over the potatoes.
  • Gently spread half of the cream of mushroom soup over the beef.
  • Repeat the process with the remaining potatoes, beef, and soup.
  • Sprinkle the shredded cheese over the top.
  • Cover the dish with foil and bake for 1 hour. Remove foil for the last 15-20 minutes.

Notes

You can prepare the casserole a day in advance—just assemble and refrigerate before baking. It can last about 3 days covered in the fridge. Freeze unbaked casserole for up to 2 months.
