  • 1 cup unsalted butter (softened)
  • 1 cup brown sugar (packed)
  • 1/2 cup granulated sugar
  • 1 tablespoon molasses
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1/2 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3 cups quick oats

For the Frosting

  • 3/4 cup unsalted butter (softened)
  • 2 ounces cream cheese (full-fat, brick style)
  • 3-4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 tablespoon cream (if needed) to adjust consistency

Instructions
 

Oatmeal Cookies

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, cream together 1 cup of softened butter, brown sugar, granulated sugar, molasses, and vanilla extract until smooth.
  • Beat in the eggs, one at a time, until well blended.
  • In another bowl, mix together flour, cinnamon, baking soda, and salt.
  • Gradually add this to the creamed mixture, then stir in the oats.
  • Drop rounded tablespoons of dough onto ungreased baking sheets.

Bake

  • Bake for 10-12 minutes or until the edges are golden.
  • Allow them to cool on the sheets for a few minutes before transferring to a wire rack to cool completely.

Frosting

  • In a medium bowl, beat together 3/4 cup of softened butter and cream cheese until creamy.
  • Gradually add in powdered sugar, then mix in vanilla extract and salt.
  • If the frosting is too thick, add a tablespoon of cream to reach your desired consistency.

Assembling the Cookies

  • Once the cookies are completely cool, spread some frosting on the flat side of one cookie, then top it with another cookie to create a sandwich.
  • Repeat until all cookies are filled.

Notes

Make sure the butter is softened for easy mixing. Chill the dough for about 30 minutes before baking for thicker cookies. Use quick oats for the best texture; old-fashioned oats may give a chewier cookie. Adjust the amount of powdered sugar in the frosting to your sweetness preference.
