Homemade Peanut Butter Cups

Ingredients
  

For the filling

  • 1/3 cup peanut butter
  • 1/4 cup powdered sugar (sifted) Make sure to sift to avoid lumps.
  • 2 tablespoons butter (softened)

For the chocolate

  • 12 oz. melting chocolate Use your favorite melting chocolate.
  • 1 teaspoon coarse salt (optional) Sprinkle on top for extra flavor.

Instructions
 

Preparation of Filling

  • Stir together 1/3 cup peanut butter, 2 tablespoons softened butter, and 1/4 cup sifted powdered sugar in a bowl until smooth.
  • Place the bowl of filling in the freezer to harden.

Making Chocolate Cups

  • Place mini paper cups in a mini muffin pan.
  • Melt chocolate according to microwave instructions.
  • Drizzle about 1 teaspoon of the melted chocolate into each paper cup.
  • Spoon 1 teaspoon of hardened filling onto the chocolate bottom and shake the pan to level.
  • Drizzle remaining melted chocolate generously over the filling and shake the pan again for a smooth finish.
  • Sprinkle with kosher salt.
  • Let the cups cool and harden before plating or freezing.

Notes

For extra flavor, add a splash of vanilla extract to the peanut butter mixture or chopped peanuts for crunch. Store in an airtight container.
