Ingredients

Main Ingredients

  • 4 pieces chicken breasts Boneless and skinless
  • 1 cup chicken broth Homemade for richer flavor, if possible
  • 1/2 cup heavy cream Can substitute with half-and-half or non-dairy cream
  • 1/4 cup all-purpose flour Can be replaced with gluten-free flour for a gluten-free option
  • 1 piece onion, chopped Add more for extra flavor if desired
  • 2 cloves garlic, minced
  • to taste Salt and pepper
  • 2 tablespoons olive oil
  • for garnish Fresh herbs (thyme or parsley) Use for serving

Instructions

Cooking the Chicken

  • In a large skillet, heat the olive oil over medium heat.
  • Season the chicken breasts with salt and pepper on both sides.
  • Brown the chicken in the skillet for about 6-7 minutes on each side until cooked through and golden brown.
  • Remove the chicken from the skillet and set aside.

Making the Gravy

  • In the same skillet, add the chopped onion and minced garlic, sautéing until softened, about 3-4 minutes.
  • Sprinkle the flour over the onions and garlic, stirring to combine. Cook for 1 minute to get rid of the raw flour taste.
  • Gradually add the chicken broth and heavy cream, stirring constantly to avoid lumps.
  • Bring the mixture to a simmer and cook until it thickens, approximately 3-5 minutes.
  • Return the chicken to the skillet, coating it in the rich gravy, and allow it to heat through for a couple of minutes.

Serving

  • Garnish with fresh herbs before serving.
  • Serve hot over mashed potatoes or rice.

Notes

For optimal results, avoid overcrowding the pan and consider making the gravy in advance for convenience.
