Honey BBQ Chicken Rice

Ingredients
  

Main Ingredients

  • 1 lb boneless, skinless chicken thighs Can substitute with chicken breasts.
  • 1 cup long-grain rice
  • 2 cups chicken broth Can substitute with vegetable broth or water.
  • 1/2 cup BBQ sauce
  • 1/4 cup honey
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • to taste Salt and pepper
  • 1 cup mixed vegetables (optional) Add any preferred vegetables.
  • to taste Chopped green onions for garnish

Instructions
 

Preparation

  • Season the chicken with garlic powder, onion powder, smoked paprika, salt, and pepper.

Cooking

  • Heat a skillet over medium heat and sear the chicken for 3–4 minutes on each side until golden brown. Remove and set aside.
  • In a bowl, mix the BBQ sauce, honey, soy sauce, and minced garlic.
  • In the same pan, toast the uncooked rice for 1–2 minutes. Add the chicken broth and half of the sauce. Stir to combine.
  • Return the chicken to the pan and pour the remaining sauce over the top.
  • Cover and simmer on low heat for 15 minutes.
  • Add the mixed vegetables, cover, and cook for 5 more minutes or until the rice is tender and the chicken is cooked through.
  • Let sit for 5 minutes. Garnish with chopped green onions and serve hot.

Notes

For more flavor, marinate the chicken in the BBQ sauce and honey for a few hours before cooking. You can also add other vegetables like bell peppers or broccoli. For a bit of spice, add red pepper flakes.
