  • 4 pieces boneless, skinless chicken breasts
  • 2 large sweet potatoes, peeled and cubed
  • 1 pound green beans, trimmed

For the Marinade

  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • Salt and black pepper to taste

Preparation and Marination

  • In a small bowl, whisk together the honey, soy sauce, minced garlic, olive oil, paprika, thyme, salt, and pepper until well combined.
  • Marinate the chicken breasts for at least 30 minutes in the refrigerator, or for up to 8 hours.

Roasting

  • Preheat your oven to 400°F (200°C).
  • Spread the cubed sweet potatoes on a lined baking sheet. Drizzle with olive oil and season with salt and pepper. Toss to coat.
  • Roast the sweet potatoes for about 15 minutes until they start to soften.
  • Remove the baking sheet from the oven and gently push the sweet potatoes to one side.
  • Place the marinated chicken breasts on the empty side of the baking sheet, ensuring enough space for even cooking.
  • Arrange the green beans around the chicken and on the sweet potato side.
  • Drizzle any remaining marinade over the chicken and vegetables.
  • Bake for 20-25 minutes until the chicken reaches 165°F (75°C) and the sweet potatoes are fully tender.

Notes

Serve hot for the best taste. For leftovers, store in an airtight container in the refrigerator for 3-4 days.
