  • 3 tablespoons olive oil Extra virgin olive oil is preferred for flavor.
  • 3 tablespoons honey Use good-quality honey for nuanced sweetness.
  • 2 tablespoons balsamic vinegar Adds tangy flavor to balance the sweetness.
  • 2 cloves garlic, minced Fresh minced garlic enhances the flavor profile.
  • 1 teaspoon dried thyme Fresh thyme can be used for even more flavor.
  • to taste Salt and freshly ground black pepper Essential for enhancing the natural flavors.

Optional Garnishes

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Wash the green beans and snap off the stem ends.
  • If using whole carrots, peel and cut them into roughly 1-inch thick diagonal pieces. If using baby carrots, you can leave them whole or halve them.

Make the Honey Glaze

  • In a small bowl, whisk together the olive oil, honey, balsamic vinegar, minced garlic, dried thyme, salt, and pepper.
  • Taste your glaze and adjust seasoning as desired.

Coat the Vegetables

  • In a large bowl, toss the prepared carrots and green beans with the honey glaze.

Roast the Vegetables

  • Spread the glazed carrots and green beans in a single layer on a baking sheet.
  • Roast in the preheated oven for 20-25 minutes, until the carrots are tender-crisp and the green beans are bright and slightly tender.

Achieve Caramelization

  • For deep golden color, broil the veggies for the last 1-2 minutes, watching closely.

Rest and Serve

  • Take them out of the oven and let them rest for a minute before garnishing and serving.

Notes

Store any leftover glaze in the fridge and use it for grilled meats. These veggies can be reheated in a skillet or oven for best results.
