Ingredients
  

Vegetables

  • 1 pound carrots, peeled and sliced
  • 1 pound green beans, trimmed

Glaze

  • 2 tablespoons olive oil
  • 1/4 cup honey
  • 2 tablespoons lemon juice
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • Salt and pepper to taste

Garnish

  • 1 tablespoon chopped fresh parsley for garnish

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, toss the sliced carrots and green beans with olive oil, honey, lemon juice, cinnamon, nutmeg, salt, and pepper until evenly coated.
  • Spread the vegetables in a single layer on a baking sheet.

Cooking

  • Roast for 20-25 minutes, or until the carrots are tender and slightly caramelized, and the green beans are tender-crisp. Stir halfway through cooking.
  • Remove from the oven and transfer to a serving dish.
  • Garnish with chopped fresh parsley.

Serving

  • Serve immediately and enjoy! This dish goes well with roasted meats, grilled chicken, or fish. You can also pair it with rice or quinoa for a complete meal.

Notes

Cut the carrots into uniform sizes to ensure even cooking. For extra flavor, add a pinch of red pepper flakes for a spicy kick. Leftovers can be stored in an airtight container in the fridge for about 3-4 days. Reheat in the microwave or on the stove until heated through.
