Ingredients
  

For the Chicken

  • 4 pieces chicken breasts
  • 1/4 cup honey Use locally sourced honey for richer flavor.
  • 1/4 cup lime juice Juice from fresh limes.
  • 2 tablespoons olive oil For greasing the grill or cooking.
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

For the Mango Salsa

  • 1 ripe mango, diced Choose a ripe mango for the best flavor.
  • 1/2 medium red onion, diced
  • 1 piece jalapeño, seeded and minced Adjust for spice preference.
  • 1/4 cup cilantro, chopped Fresh cilantro is recommended.
  • 1 lime juiced Juice for the salsa.

Instructions
 

Marinating the Chicken

  • In a medium bowl, mix honey, lime juice, olive oil, salt, and pepper until well combined. Ensure the honey is fully dissolved.
  • Marinate the chicken in this mixture for at least 30 minutes for optimal flavor.

Cooking

  • Preheat your grill or oven to medium-high heat (around 375°F). If grilling, lightly oil the grates to prevent sticking.
  • Grill or bake the chicken for about 6-7 minutes per side until fully cooked, achieving an internal temperature of 165°F.

Preparing the Salsa

  • While the chicken is cooking, prepare the mango salsa by combining diced mango, red onion, jalapeño, cilantro, and lime juice in a separate bowl. Mix gently to meld the flavors.

Serving

  • Once the chicken is cooked, serve it hot, topped generously with the fresh mango salsa.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. The mango salsa is best enjoyed fresh but can be stored for no more than a day.
