Preparation

  • Preheat your oven to 425°F (220°C).
  • In a large bowl, toss the baby carrots with olive oil, honey, salt, and pepper until evenly coated.
  • Spread the carrots on a baking sheet in a single layer, avoiding overcrowding.

Cooking

  • Roast in the preheated oven for 25-30 minutes, stirring halfway through, until tender and caramelized.
  • Remove from the oven and garnish with fresh thyme or parsley if desired. Serve warm.

Notes

For optimal freshness, store leftovers in an airtight container in the refrigerator for 4-5 days. They can also be frozen for up to 3 months. To enhance flavor, you can experiment with adding balsamic vinegar, citrus zest, or use maple syrup instead of honey.
