Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, sift together the flour, baking powder, and salt.
  • In a separate bowl, cream together the softened butter and granulated sugar using an electric mixer until light and fluffy.
  • Beat in the egg and vanilla extract until well combined.
  • Gradually mix the dry ingredients into the wet ingredients until just combined.
  • Dust your hands lightly with flour and roll the dough into 3-inch horseshoe shapes.

Baking

  • Place the shaped cookies on a lined baking sheet and bake for 10-12 minutes until lightly golden.
  • Allow cookies to cool on a wire rack, then dust with powdered sugar or dip in melted chocolate if desired.

Notes

Store in an airtight container at room temperature for 5-7 days. To freeze, place in a freezer-safe container with parchment paper between layers.
