Ingredients
  

Cheese Base

  • 8 ounces full fat cream cheese, softened
  • 1/2 cup shredded low moisture part skim mozzarella
  • 1/4 cup chopped fresh basil plus more for garnishing
  • 1/4 teaspoon coarsely ground black pepper more to taste

Tomato Layer

  • 2 cups grape tomatoes (10 oz. pkg.)
  • 8 ounces fresh mozzarella patted dry and cut into small pieces

Dipping Option

  • Bread or crackers for dipping

Preparation

  • Preheat the oven to 425 degrees F. Spray a baking dish with nonstick cooking spray.
  • In a mixing bowl, combine cream cheese, mozzarella, chopped basil, and pepper. Spread this cheese mixture into the bottom of the prepared baking dish.
  • Arrange the grape tomatoes evenly on top of the cheese layer.
  • Place the fresh mozzarella pieces over the tomatoes. Sprinkle with more pepper if desired.

Baking

  • Bake for 25-30 minutes or until heated through, bubbling, and the tomatoes are starting to burst.
  • Let the dip stand for 10 minutes, then serve topped with additional fresh basil.

Notes

Serve warm with a side of crusty bread or crunchy crackers. For extra flavor, consider adding minced garlic to the cheese mixture. Make sure to pat the fresh mozzarella dry to avoid excess moisture in the dip. This dip can be prepared ahead of time and stored in the fridge before baking. Reheat in the oven or microwave before serving. You can make a spicy version by adding red pepper flakes or chopped jalapeƱos.
