Ingredients
  

Main Ingredients

  • 2 slices good bread like sourdough or multigrain
  • 1/2 cup cottage cheese whipped until smooth
  • 1 avocado ripe, sliced or mashed
  • 2 tsp hot honey store-bought or homemade
  • 1 tsp lemon juice to brighten avocado
  • 1/8 tsp red pepper flakes optional, for heat
  • 1/8 tsp salt to taste
  • 1 tsp olive oil optional, for brushing bread

Instructions
 

  • Toast the bread slices until golden and crisp. For extra flavor, brush with olive oil and pan-toast.
  • Blend or whip cottage cheese in a food processor until smooth and creamy.
  • Prepare avocado by slicing or mashing it. Mix with lemon juice and a pinch of salt.
  • Spread whipped cottage cheese on each toast. Layer with avocado. Drizzle hot honey on top.
  • Finish with red pepper flakes and a bit of flaky salt. Garnish with herbs if desired.

Notes

Whip cottage cheese ahead and store for 3 days. Hot honey can be homemade by warming honey with chili flakes. Best assembled fresh.
