Ingredients

  • 1 large eggplant
  • 2 cups marinara sauce
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 1 cup breadcrumbs
  • 1/4 cup fresh basil, chopped
  • 1 teaspoon garlic powder
  • to taste Salt and pepper

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • Slice the eggplant into rounds, about 1/2 inch thick, and sprinkle with salt. Let them sit for about 30 minutes to draw out moisture.
  • Rinse and pat the eggplant dry.

Assembly

  • In a baking dish, layer marinara sauce, followed by a layer of eggplant, then sprinkle with mozzarella cheese and Parmesan.
  • Repeat the layers until all ingredients are used, finishing with a layer of cheese on top.
  • Combine breadcrumbs with garlic powder, basil, salt, and pepper, then sprinkle over the top layer of cheese.
  • Drizzle with olive oil.

Cooking

  • Bake for 25-30 minutes until golden and bubbly.
  • Let it cool for a few minutes before serving.

Notes

Serve hot from the oven, paired with a green salad or crusty bread. Optionally, sprinkle extra fresh basil on top. Store leftovers in an airtight container in the fridge for 3-4 days or freeze for up to 3 months.
