  • 2-3 pounds chuck roast or bottom beef roast
  • 1 tablespoon olive oil
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 cup beef broth Use good quality or homemade for extra flavor.
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • to taste Salt and pepper
  • 4-6 hoagie rolls or crusty buns Look for ones that are crusty.
  • Sliced provolone or mozzarella cheese Can swap with cheddar or Swiss cheese.
  • Fresh parsley for garnish (optional)

Instructions
 

Preparation

  • Set the Instant Pot to 'Sauté' mode and heat the olive oil.
  • Add the sliced onion, cooking until softened—about 4-5 minutes.
  • Stir in the minced garlic and cook for an additional minute, until fragrant.

Searing the Meat

  • Season the chuck roast with salt, pepper, and thyme on all sides.
  • Place the roast in the pot and sear for about 2-3 minutes per side, ensuring a nice golden-brown crust forms.

Cooking

  • Pour in the beef broth and Worcestershire sauce, scraping up any browned bits from the bottom of the pot.
  • Close the lid of the Instant Pot and set it to 'Manual' mode on high pressure for 60 minutes.

Finishing Touches

  • Allow the pressure to release naturally for about 10-15 minutes, then manually release any remaining pressure.
  • Remove the roast from the pot and shred it using two forks.
  • Strain the remaining cooking liquid into a bowl or measuring cup to reserve as au jus.
  • Serve the shredded beef on toasted hoagie rolls, topped with slices of melted cheese, and a side of au jus for dipping.

Notes

For spice, add sliced jalapeños during the sauté step. Store leftovers in airtight containers for up to 3-4 days or freeze for longer preservation. To enhance flavor, consider adding a splash of balsamic vinegar or soy sauce.
