  • 1 onion, chopped
  • 2 carrots, diced
  • 2 parsnips, diced
  • 3 potatoes, diced
  • 2 stalks celery, chopped
  • 4 cups vegetable broth
  • 1 cup barley or any whole grain
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste
  • Fresh parsley for garnish

Cooking Instructions

  • Heat the olive oil in a large pot over medium heat.
  • Add the onion and sauté until translucent.
  • Add the carrots, parsnips, and celery, cooking for about 5 minutes.
  • Stir in the potatoes and barley, mixing well.
  • Pour in the vegetable broth and bring to a boil.
  • Add the thyme, rosemary, salt, and pepper.
  • Reduce heat and let simmer for about 30-40 minutes, or until the vegetables are tender and the grains are cooked.
  • Serve hot, garnished with fresh parsley.

Notes

You can add any of your favorite vegetables to this stew, such as peas or bell peppers. Adjust the seasoning to your preference. If you like it spicier, add a pinch of red pepper flakes. Use fresh herbs if possible for a more vibrant flavor. For a gluten-free version, replace barley with quinoa or any gluten-free grain.
