  • 8 large large eggs (room temperature)
  • 1/4 cup milk (adds creaminess)

  • 8 8-inch flour tortillas (soft and pliable)
  • 1 cup shredded cheddar cheese
  • 1 tbsp butter (for cooking)
  • Non-stick cooking spray (for the skillet or additional butter)

Preparation

  • Crack the eggs into a large bowl and add the milk, salt, and pepper. Whisk until well blended and frothy, about 2-3 minutes.
  • Lightly toast the tortillas in a dry skillet or microwave them for a few seconds to make them more pliable.

Cooking

  • Melt the butter in a non-stick skillet over medium heat. Pour in the egg mixture and gently stir for about 5-7 minutes, or until the eggs are soft and fluffy.
  • Place one warm tortilla on a flat surface. Lay a sausage link down the edge, spoon a tablespoon of scrambled eggs on top, and sprinkle a generous amount of shredded cheddar cheese.
  • Tightly roll up the tortilla, folding in the ends as you go to seal those delicious fillings inside.
  • Clean the skillet, lightly spray it with non-stick cooking spray or add more butter, and heat over medium. Place the roll-ups seam side down and cook until golden brown, about 2-3 minutes per side.

  • Serve these scrumptious roll-ups warm, paired with salsa or hot sauce to kick it up a notch!

Notes
