  • 2 cups tortellini
  • 1 cup salami, diced
  • 1 cup provolone cheese, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup green bell pepper, diced
  • 1/4 cup red onion, diced
  • 1/4 cup black olives, sliced
  • 1/4 cup pepperoncini, sliced
  • 1/4 cup fresh basil, chopped

Dressing

  • 1/2 cup Italian dressing
  • Salt and pepper to taste

Instructions
 

Preparation

  • Cook tortellini according to package instructions. Drain and let cool.
  • In a large bowl, combine the cooled tortellini, salami, provolone cheese, cherry tomatoes, green bell pepper, red onion, black olives, pepperoncini, and fresh basil.
  • Drizzle with Italian dressing and toss to combine.
  • Season with salt and pepper to taste.
  • Refrigerate for at least 30 minutes before serving to let the flavors meld.

Notes

Serve the salad chilled or at room temperature. It makes a great main dish or side salad. Garnish with extra fresh basil or cheese, and pair with crusty bread for a complete meal. Store leftovers in an airtight container in the fridge for up to 3 days.
