  • 8 oz Ramen noodles
  • 1 can White beans
  • 14.5 oz Italian seasoned tomatoes
  • 2 medium Potatoes, diced
  • 4 cups Broth (chicken or vegetable)
  • 2 tbsp Olive oil
  • 2 cloves Garlic, minced
  • 1 medium Onion, chopped
  • to taste Salt
  • to taste Pepper
  • to taste Parmesan cheese, grated (optional)

Instructions
 

Preparation

  • In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, and sauté until soft.
  • Add Italian seasoned tomatoes and stir for a few minutes.
  • Pour in the broth and bring to a boil.
  • Add diced potatoes and cook until tender.
  • Stir in white beans and ramen noodles, and cook according to noodle package instructions.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with grated Parmesan cheese if desired.

Notes

Store any leftover soup in an airtight container in the fridge for about 3 to 4 days. Add extra broth when reheating as noodles may absorb some.
