Ingredients
  

For the Chicken Marinade

  • 500 g chicken thighs, boneless and skinless
  • 1/4 cup soy sauce
  • 2 tablespoons sake
  • 1 tablespoon mirin
  • 1 clove garlic, minced
  • 1 teaspoon ginger, grated

For Frying

  • 1/2 cup cornstarch For dredging
  • Oil for frying Enough to deep fry
  • Lemon wedges For serving

Instructions
 

Marination

  • In a bowl, combine soy sauce, sake, mirin, garlic, and ginger.
  • Add chicken pieces and marinate for at least 30 minutes.

Frying

  • Heat oil in a deep fryer or heavy pot to 350°F (180°C).
  • Dredge marinated chicken in cornstarch, shaking off excess.
  • Fry chicken in batches until golden brown and crispy, about 5-6 minutes.
  • Remove and drain on paper towels.

Serving

  • Serve hot with lemon wedges.

Notes

Make sure to marinate the chicken for at least 30 minutes for the best flavor. You can store leftovers in an airtight container for up to 3 days in the refrigerator.
