  • 1 lb pork (such as shoulder, diced)
  • 2 tablespoons vegetable oil
  • 1 onion (sliced)
  • 2 carrots (sliced)
  • 2 potatoes (cubed)
  • 3 cups water or broth
  • 1/4 cup Japanese curry powder
  • 1 tablespoon soy sauce
  • Salt and pepper to taste
  • Cooked rice (for serving)

  • Heat the oil in a large pot over medium heat.
  • Add the pork and brown on all sides.
  • Stir in the onion and cook until soft.
  • Add the carrots and potatoes.
  • Pour in the water or broth and bring to a boil.
  • Reduce heat, cover, and simmer for about 20-30 minutes, until the meat is tender.
  • Stir in the curry powder and soy sauce, adding salt and pepper to taste.
  • Simmer for an additional 10 minutes until thickened.
  • Serve over cooked rice.

Notes

For extra flavor, try marinating the pork in soy sauce for about 30 minutes before cooking. If you prefer a thicker curry, mix a little cornstarch with water and stir it in just before serving. You can store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months.
