  • 3-4 lb chuck roast Choose a well-marbled roast for the best flavor.
  • 2 large onions, sliced Onions should be caramelized for depth of flavor.
  • 2 cups beef broth
  • 1 cup French onion soup Can be substituted with additional beef broth and caramelized onions.
  • 2 tablespoons olive oil For searing the roast.
  • 4 cloves garlic, minced
  • to taste Salt and pepper Season the meat well before searing.
  • to taste Fresh thyme (optional) Add for additional flavor.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large Dutch oven, heat the olive oil over medium-high heat.
  • Season the chuck roast with salt and pepper, then sear it on all sides until browned.
  • Remove the roast and set it aside.
  • In the same pot, add the sliced onions and cook until they are softened and caramelized, about 15 minutes.
  • Stir in the minced garlic and cook for an additional minute.
  • Return the roast to the pot and add the beef broth and French onion soup. Add fresh thyme if desired.
  • Cover the pot and transfer it to the oven.
  • Cook for 3-4 hours or until the meat is very tender.
  • Remove from the oven, let it rest for a few minutes, then slice and serve.

Notes

To store leftovers, let the pot roast cool down, place it in an airtight container, and store it in the refrigerator for up to 3-4 days. Freeze for longer storage, where it will last up to 3 months.
