Ingredients
  

For the Chicken

  • 2 pieces boneless, skinless chicken breasts
  • 1/4 cup lime juice Freshly squeezed for best flavor
  • 2 tablespoons olive oil Can substitute with avocado oil
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt to taste Salt
  • Pepper to taste Pepper

Toppings

  • 2 pieces ripe avocados, sliced
  • 1 cup cherry tomatoes, halved
  • Fresh cilantro for garnish Fresh cilantro Optional garnish

Instructions
 

Preparation

  • In a bowl, whisk together lime juice, olive oil, garlic powder, cumin, salt, and pepper to create the marinade.
  • Coat the chicken breasts in the marinade, ensuring they are fully covered. Let marinate for at least 30 minutes, preferably a few hours.

Cooking

  • Preheat your grill to medium-high heat, around 375°F.
  • Grill the marinated chicken breasts for approximately 6-7 minutes on each side until golden brown and the internal temperature reaches 165°F.
  • In the last few minutes of grilling, add the avocado slices directly onto the grill for a couple of minutes until warmed and charred.

Serving

  • Serve the grilled chicken topped with grilled avocado slices and halved cherry tomatoes. Garnish with fresh cilantro if desired.

Notes

For best results, serve hot off the grill with a side of quinoa salad or grilled corn. Pair with iced tea or a light white wine.
