  • 4 slices Bacon Cook until crispy for best texture.
  • 2 large Eggs Scramble them in the skillet.
  • 1 medium Zucchini Sliced into half-moons.
  • to taste Salt and pepper For seasoning.
  • 1 tablespoon Olive oil Optional, for added flavor.
  • for garnish Chopped parsley Optional, for decoration.

Preparation

  • Heat a skillet over medium heat.
  • Add the bacon and cook until crispy, then remove and drain on paper towels.
  • In the same skillet, add the zucchini sliced into half-moons and cook for about 3-4 minutes until tender.
  • Push the zucchini to one side of the skillet and crack the eggs into the other side.
  • Scramble the eggs and cook until set.
  • Crumble the cooked bacon and mix it in with the zucchini and eggs.
  • Season with salt and pepper to taste.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet over low heat or microwave until heated through. You can also add spices like garlic powder or Italian seasoning for extra flavor.
