Preparation

  • Gather and prep your ingredients: Slice the beef into thin strips and chop the bell peppers and onion.
  • Lay everything out like a beautiful color palette.

Cooking

  • Toss in the chopped onions and bell peppers, sautéing until they soften (about 5-7 minutes).
  • Increase the heat to medium-high, add the sliced beef to the skillet, and season generously with salt and pepper.
  • Cook until the beef is beautifully browned and tender (about 3-5 minutes).
  • Reduce the heat to low and lay provolone slices over the beef mixture, allowing the cheese to melt completely.

Assembly

  • Grab your low-carb tortillas and spoon the beef-cheese mixture onto each one.
  • Roll them up tightly and place them seam-side down in the skillet.

Finishing

  • Return the roll-ups to the skillet, cooking until golden brown and crisp on all sides (about 3-4 minutes).
