Muffin Ingredients

  • 6 large eggs
  • 1 cup shredded cheddar cheese Feel free to swap with your favorite cheese.
  • 1 cup cooked and crumbled sausage Can use spicy Italian sausage for a kick.
  • 1/4 cup almond flour Coconut flour can be used as a substitute.
  • 1/2 teaspoon baking powder
  • to taste salt and pepper
  • to taste chopped green onions Optional for added flavor.

Preparation

  • Preheat your oven to 350°F (175°C) and grease a muffin tin generously.
  • In a large mixing bowl, whisk the eggs, almond flour, baking powder, salt, and pepper until combined and slightly frothy, about 1-2 minutes.
  • Stir in the cooked sausage and shredded cheese until evenly distributed. Optionally, add chopped green onions for extra flavor.
  • Pour the mixture into the prepared muffin tin, filling each cup about three-quarters full.

Baking

  • Place the muffin tin in the oven and bake for 20-25 minutes, or until the muffins are set and lightly golden.
  • Remove from the oven and let cool in the tin for a few minutes before transferring to a wire rack.

Notes

Store in an airtight container in the refrigerator for up to 5 days or freeze individually wrapped for up to 3 months. Reheat in the oven for the best texture.
