  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

For the Key Lime Cheesecake Filling

  • 8 oz cream cheese, softened to room temperature
  • 1 cup powdered sugar
  • 1/2 cup key lime juice, freshly squeezed for best flavor
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream

Prepare the Graham Cracker Crust

  • In a mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter.
  • Stir until well mixed and resembles wet sand.
  • Press the mixture firmly into the bottom of each serving glass or jar. Place in the refrigerator to set while you prepare the filling.

Make the Cheesecake Filling

  • Using an electric mixer, beat the softened cream cheese until smooth, approximately 2-3 minutes on medium speed.
  • Gradually add powdered sugar, mixing until well incorporated, approximately another 1-2 minutes.
  • Add the key lime juice and vanilla extract, continuing to mix until smooth and creamy.
  • In a separate bowl, whip the heavy cream until stiff peaks form.
  • Gently fold the whipped cream into the cream cheese mixture, being careful not to deflate it, until fully combined.

Layer the Parfaits

  • Begin layering the graham cracker crust and cheesecake filling in the prepared glasses. Start with a layer of crust, followed by a layer of cheesecake filling. Repeat until all ingredients are used, finishing with a layer of whipped cream on top.

Chill and Serve

  • Cover each parfait with plastic wrap and refrigerate for at least 2 hours to allow the flavors to meld together.
  • Before serving, garnish with lime zest and a lime wedge for a vibrant, fresh touch.

Notes

Prepare the graham cracker crust and cheesecake filling a day in advance to save time. Use fresh lime juice for the best flavor. For variations, consider adding coconut extract or fresh berries.
