Ingredients
  

For the crust

  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup butter, melted Use unsalted butter for best results.

For the filling

  • 4 large eggs Large eggs work best for this recipe.
  • 1 cup sweetened condensed milk
  • 1/2 cup key lime juice Fresh juice is recommended.
  • zest of 2 limes Ensure to only zest the green part.
  • to dust powdered sugar Optional for serving.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9x9-inch baking pan.
  • In a mixing bowl, combine the graham cracker crumbs, sugar, and melted butter. Press this mixture firmly into the bottom of the prepared pan.
  • In another bowl, whisk together the eggs, sweetened condensed milk, key lime juice, and lime zest until smooth.

Baking

  • Pour the filling over the crust and bake for 20-25 minutes until set with a slight jiggle in the center.

Cooling

  • Remove from the oven and allow to cool to room temperature, then refrigerate for at least 2 hours before slicing.

Serving

  • Dust with powdered sugar if desired and enjoy chilled.

Notes

For best flavor, use fresh key lime juice. These bars pair well with whipped cream or vanilla ice cream.
