Preparation

  • Prep your ingredients: chop garlic, grate ginger, slice green onions, and cook your rice.

Cooking

  • In a large skillet, heat a splash of oil over medium heat.
  • Add the minced garlic and grated ginger; sauté for about 30 seconds until fragrant.
  • Increase heat to medium-high and add the ground beef; cook until browned and no longer pink, breaking it apart (about 5 minutes).
  • Stir in the soy sauce and brown sugar; simmer for about 3 minutes to meld flavors.
  • Toss in the bell peppers and carrots; sauté for another 3-4 minutes until tender yet crisp.
  • Serve the beef mixture over warm rice and top with sliced green onions.

Notes

Don’t overcook veggies, marinate for extra flavor, and adjust sweetness if needed. Leftovers can be used in wraps or salads, and the dish freezes well.
