Ingredients
  

Cookie Cups

  • 1 cup sugar cookie dough Store-bought or homemade

Filling

  • 1 cup homemade lemon curd Can also use store-bought
  • Optional: powdered sugar for dusting

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • Grease a mini muffin tin with cooking spray or butter.
  • Roll the sugar cookie dough into small balls, about 1 inch in diameter.
  • Gently press the dough into the bottom and up the sides of the muffin cups.

Baking

  • Bake for 10-12 minutes, until lightly golden and just set at the edges.
  • Remove the cookie cups from the oven and let them cool completely in the tin.

Filling

  • Fill each cookie cup with lemon curd, allowing it to spill slightly over the edges.
  • If desired, dust with powdered sugar before serving.

Notes

Serve at room temperature or slightly chilled. Pairs well with lemonade or iced tea. Optional garnishes: thin lemon slices or mint leaves. Store in an airtight container in the fridge for up to 3 days, or freeze for up to 2 months.
