Ingredients
  

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup granulated sugar

Wet Ingredients

  • 1/2 cup unsalted butter, melted
  • 1 cup buttermilk
  • Zest of 1 lemon
  • Juice of 1 lemon

Add-ins

  • 1 cup fresh blueberries Use fresh for best flavor, avoid thawing if using frozen.

Preparation

  • Preheat your oven to 425°F (220°C).
  • In a large bowl, combine the flour, baking powder, salt, and sugar.
  • In another bowl, mix the melted butter, buttermilk, lemon zest, and lemon juice.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the blueberries.
  • Pour the batter into a greased baking dish.

Baking

  • Bake for 20-25 minutes or until golden brown.
  • Allow to cool slightly before serving.

Notes

Serve warm with butter. Store in an airtight container at room temperature, or freeze for up to a month. Reheat in the oven or microwave before serving. Don’t overmix the batter, and feel free to experiment with different fruits!
