  • 1 cup unsalted butter, melted
  • 2 cups granulated sugar
  • 4 large eggs
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 2 tablespoons lemon zest Use fresh lemons for best flavor.
  • 1/2 cup fresh lemon juice Fresh is preferred for flavor.
  • 1 teaspoon baking powder
  • Powdered sugar for dusting (optional)

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan.
  • In a large bowl, whisk together the melted butter and granulated sugar.
  • Add the eggs one at a time, mixing well after each addition.
  • Stir in the lemon zest and fresh lemon juice.
  • In another bowl, whisk together the flour, salt, and baking powder.
  • Gradually mix the dry ingredients into the wet mixture until just combined.
  • Pour the batter into the prepared baking pan and spread evenly.
  • Bake for 25-30 minutes, or until a toothpick inserted comes out clean.
  • Allow to cool completely before dusting with powdered sugar. Cut into squares and serve.

Notes

Store in an airtight container at room temperature for up to three days, or refrigerate for up to a week. For longer storage, freeze for 2-3 months, tightly wrapped.
