  • 2 Tablespoons butter
  • 2 boneless, skinless chicken breasts
  • 1 Tablespoon garlic powder
  • 1 teaspoon salt
  • 1.5 teaspoon ground black pepper
  • 2 Tablespoons fresh garlic, minced
  • 2 Tablespoons fresh lemon juice
  • 6 ounces whole green beans, frozen
  • 2 Tablespoons chopped fresh parsley

  • In a large skillet set over medium-high heat, add the butter.
  • Season both sides of the chicken breasts with garlic powder, salt, and pepper.
  • Once the butter has melted, add the seasoned chicken to the pan. Cook for 4 minutes without flipping.
  • Drizzle half of the lemon juice over the chicken, add fresh garlic and parsley, flip the chicken, and drizzle the rest of the lemon juice.
  • Add the frozen green beans around the chicken and cover.
  • Cook for 6 minutes or until the chicken is cooked through to 165°F. For more tender green beans, remove the chicken and cook the beans for an additional 2-3 minutes.

Notes

Serve hot and optionally garnish with extra chopped parsley. Pairs well with rice or a simple salad. To store, let cool and refrigerate in an airtight container for up to 3 days. Reheat before serving. Tips include ensuring the skillet is hot for a nice sear and adding more lemon for stronger flavor.
