  • 1 pound shrimp, peeled and deveined Make sure to de-vein the shrimp if they haven't been prepped.
  • 1 bunch asparagus, trimmed You can substitute asparagus with broccoli or green beans.
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced Fresh garlic will give the best flavor.
  • 1 each lemon, juice and zest Adjust the amount based on taste preference.
  • to taste salt and pepper
  • optional red pepper flakes Increase for more spiciness.
  • optional fresh parsley for garnish

Cooking

  • In a large skillet, heat the olive oil over medium heat.
  • Add minced garlic and sauté for about 1 minute until fragrant.
  • Add the shrimp, salt, pepper, and red pepper flakes (if using) to the skillet and cook until the shrimp turn pink, about 3-4 minutes.
  • Toss in the asparagus and cook for an additional 3-5 minutes until the asparagus is tender but crisp.
  • Squeeze lemon juice over the dish and add lemon zest.
  • Toss everything together and garnish with fresh parsley before serving.

Notes

Serve warm. This dish pairs wonderfully with rice, quinoa, or pasta. For added flavor, sprinkle some extra lemon juice or fresh herbs on top. To store leftovers, let the dish cool to room temperature, place it in an airtight container, and refrigerate for up to 2 days. Reheat gently to avoid overcooking the shrimp.
