  • 1 pound shrimp, peeled and deveined
  • 1 bunch asparagus, trimmed
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 juice of lemon
  • Salt and pepper to taste
  • Red pepper flakes (optional)
  • Fresh parsley for garnish

Cooking

  • In a large skillet, heat the olive oil over medium heat for about 1-2 minutes until it shimmers.
  • Add the minced garlic and sauté for about 30 seconds, stirring frequently, until fragrant and slightly golden. Be careful not to burn it.
  • Add the shrimp to the skillet and cook until they turn pink and opaque, about 3-5 minutes, stirring occasionally.
  • Add the asparagus and continue to cook for an additional 3-4 minutes, or until the asparagus is tender-crisp and bright green.
  • Squeeze the lemon juice over the shrimp and asparagus. Season with salt, pepper, and red pepper flakes. Toss to combine.
  • Garnish with fresh parsley before serving.

Notes

Serve hot paired with fluffy rice or crusty bread. Can be adapted to include other proteins or vegetables.
