  • 1 cucumber, diced
  • 1 cup feta cheese, crumbled

  • 2 tablespoons olive oil

  • Fresh herbs (mint, dill, or basil), optional Store fresh herbs separately to maintain freshness.

Preparation

  • In a large bowl, combine the chickpeas, cucumber, and feta cheese.
  • In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.
  • Pour the dressing over the salad and toss to combine.
  • If desired, add fresh herbs and mix well.
  • Serve immediately or chill for a better flavor.

Notes
