For the Cookies

  • 1 cup unsalted butter, softened Make sure it's at room temperature
  • 1 cup granulated sugar
  • 1/2 cup brown sugar Packed
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 tablespoon lemon zest Zest from fresh lemons
  • 1 tablespoon poppy seeds
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

For the Frosting

  • 1 cup cream cheese, softened Ensure it's at room temperature
  • 2 cups powdered sugar
  • 1 tablespoon lemon juice

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth and fluffy (about 2-3 minutes).
  • Beat in the egg and vanilla extract until thoroughly combined.
  • In another bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, lemon zest, and poppy seeds.
  • Gradually add the dry mixture to the wet ingredients, mixing until just combined.
  • Drop tablespoon-sized portions of dough onto a baking sheet lined with parchment paper.

Baking

  • Bake for 10-12 minutes or until the edges are lightly golden.
  • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Frosting

  • For the frosting, beat together the cream cheese, powdered sugar, and lemon juice until smooth.
  • Spread or pipe the frosting onto the cooled cookies.

Notes

Serve at room temperature. Consider decorating them with extra poppy seeds or a drizzle of lemon glaze.
