Preparation

  • In a saucepan, combine the heavy cream and sugar over medium heat. Stir gently for about 5-7 minutes until the sugar dissolves and the cream is just about to reach a boil.
  • Remove the saucepan from the heat and stir in the fresh lemon juice. The mixture should start to thicken slightly.
  • Allow the mixture to cool slightly at room temperature, then pour it into individual serving dishes or ramekins.
  • Refrigerate the posset for at least 4 hours, or until it has set firmly.
  • Serve the Lemon Posset chilled.

Notes

For an elegant presentation, consider garnishing with fresh mint leaves, lemon zest, or raspberries. Store in airtight containers in the refrigerator for up to 4 days.
