Ingredients
  

For the potato skins

  • 4 large russet potatoes Ensure they are well-scrubbed
  • 8 slices bacon Cooked until crispy
  • 1 cup cheddar cheese, shredded
  • 1/4 cup green onions, chopped For garnish and flavor

For seasoning

  • 1/2 cup sour cream For serving
  • Olive oil For brushing the skins
  • Salt and pepper To taste

Preparation

  • Preheat your oven to 400°F (200°C).
  • Wash and dry the potatoes, then prick them all over with a fork. Rub the skins with olive oil and generously season with salt and pepper.
  • Place the potatoes directly on the oven rack and bake for about 45-60 minutes, or until they are tender when pierced with a fork.

Cooking

  • While the potatoes are baking, cook the bacon in a skillet over medium-high heat until crispy. Transfer to a paper towel-lined plate to drain, then chop into small bits.
  • Once the potatoes are done, remove them from the oven and let cool slightly. Slice each potato in half lengthwise, then scoop out some of the flesh, leaving about 1/4-inch of potato for texture.
  • Brush the insides of the scooped-out potato skins with olive oil and season lightly with salt and pepper.
  • Place the skins back on the baking sheet and return to the oven for an additional 10-15 minutes, or until the edges are golden and crispy.
  • Remove the potato skins from the oven and fill each with the chopped bacon, shredded cheese, and green onions.
  • Return the loaded skins to the oven for 5-7 minutes, or until the cheese is melted and bubbly.

Serving

  • Serve immediately with a dollop of sour cream on the side for dipping.

Notes

For the best experience, serve your loaded potato skins hot out of the oven. They pair well with a side salad or fresh vegetables. Consider adding fresh herbs or an extra drizzle of ranch or hot sauce for additional flavor.
