Ingredients
  

For the roasted potatoes

  • 4 large potatoes Washed and diced into bite-sized pieces
  • 2 tablespoons olive oil For tossing the potatoes
  • to taste salt
  • to taste pepper

For the taco filling

  • 1 pound ground beef or turkey Feel free to substitute with plant-based meat for a vegetarian option
  • 1 cup black beans Drained and rinsed
  • 1 cup corn Canned or frozen
  • 1 cup diced tomatoes
  • 1 tablespoon taco seasoning

For serving

  • 1 avocado, diced
  • 1 cup shredded cheese Cheddar or taco blend
  • fresh cilantro for garnish

Instructions
 

Preparation

  • Preheat the oven to 425°F (220°C).
  • Wash and dice the potatoes into bite-sized pieces, then toss them with olive oil, salt, and pepper.
  • Spread the potatoes on a baking sheet and roast for 25-30 minutes, or until crispy and golden brown.

Cooking

  • In a skillet over medium heat, cook the ground meat until browned. Drain excess fat.
  • Mix in taco seasoning, black beans, corn, and diced tomatoes. Cook for an additional 5 minutes until heated through.

Assembly

  • Once the potatoes are ready, assemble the taco bowls by adding the roasted potatoes to bowls, then topping with the meat mixture, avocado, and cheese.
  • Garnish with fresh cilantro.

Serving

Notes

Store any leftovers in an airtight container in the fridge for up to 3 days. Reheat in the microwave or oven until warm. You can prepare the different components ahead of time.
