  • 4 pieces chicken breasts, boneless skinless
  • 1 cup bread crumbs
  • 1 cup grated Parmesan cheese divided
  • 1 cup shredded mozzarella cheese
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1/4 cup milk
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Preparation

  • Preheat your oven to 375°F (190°C).
  • In one dish, mix the breadcrumbs, half of the Parmesan cheese, and seasonings.
  • In another dish, beat the eggs and milk together.
  • Place the flour in a third dish.
  • Dredge each chicken breast in the flour, then dip it in the egg mixture, and finally coat it with the breadcrumb mixture.

Cooking

  • Heat the olive oil in a skillet over medium heat.
  • Cook the chicken for 3-4 minutes on each side until golden brown.
  • Transfer the cooked chicken to a baking dish.
  • Mix the remaining Parmesan cheese with mozzarella and minced garlic. Top the chicken with this cheese mixture.
  • Bake in the oven for 20-25 minutes or until the chicken is cooked through.

Notes

Make sure the chicken breasts are of even thickness for consistent cooking. You can add more spices or herbs to the breadcrumb mixture for extra flavor. For a crunchier texture, bake the chicken on a wire rack placed in the baking dish.
