  • 1 medium eggplant
  • 1 tablespoon olive oil Can substitute with other oils if preferred.
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • to taste Salt and pepper

Optional Topping

  • to taste grated parmesan cheese For topping, optional.

Instructions
 

Preparation

  • Slice the eggplant into ½-inch thick rounds.
  • In a bowl, mix the olive oil, garlic powder, paprika, salt, and pepper.
  • Coat the eggplant slices with this mixture evenly.

Cooking

  • Preheat the air fryer to 375°F (190°C).
  • Place the seasoned eggplant slices in the air fryer basket in a single layer.
  • Air fry for about 15 minutes, flipping halfway through, until golden and crispy.
  • If desired, sprinkle grated parmesan cheese on top in the last 2 minutes of cooking.

Notes

Make sure to slice the eggplant evenly for even cooking. If a firmer texture is desired, sprinkle with salt and let sit for 30 minutes, rinse, and pat dry before cooking. Experiment with different spices and seasonings for various flavors.
