Ingredients
  

Zucchini and Coating

  • 2 medium zucchinis Wash and cut into thin fries.
  • 1 cup breadcrumbs (preferably whole wheat) Used for coating.
  • 1/2 cup grated Parmesan cheese Adds flavor and crispiness.
  • 1 teaspoon garlic powder For seasoning.
  • 1 teaspoon paprika For added flavor.
  • Salt and pepper to taste To enhance the flavor.
  • 1 large egg For binding the coating.
  • Olive oil spray To lightly coat the fries before cooking.

Preparation

  • Start by washing the zucchinis and cutting them into thin fries.
  • In a medium bowl, mix the breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper.
  • In another bowl, beat the egg.
  • Dip each zucchini fry into the egg, then coat with the breadcrumb mixture.

Cooking

  • Preheat your air fryer to 400°F (200°C).
  • Place the coated zucchini fries in the air fryer basket in a single layer. Spray lightly with olive oil.
  • Cook in the air fryer for about 10-12 minutes, shaking the basket halfway through to ensure even cooking.
  • Once they are golden and crispy, take them out and let them cool slightly before serving.

Notes

You can serve these zucchini fries as a snack, side dish, or a light appetizer. Pair with dipping sauces like ranch, marinara, or spicy aioli. Store leftovers in an airtight container in the refrigerator for 2-3 days. Reheat in the air fryer for crispiness.
