  • 4 pieces boneless, skinless chicken breasts
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese Use freshly grated for better flavor.
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh basil for garnish

Cooking

  • Heat olive oil in a large skillet over medium heat.
  • Season the chicken breasts with salt and pepper.
  • Add the chicken to the skillet and cook until golden brown on both sides and cooked through, about 5-7 minutes per side.
  • Remove chicken from skillet and set aside.
  • In the same skillet, add minced garlic and sun-dried tomatoes, sauté for 1-2 minutes.
  • Pour in the heavy cream and bring to a simmer.
  • Stir in the Parmesan cheese and Italian seasoning, cooking until the sauce thickens.
  • Return the chicken to the skillet, spoon the sauce over the top, and cook for an additional 3-5 minutes.

Notes

This dish is best served over pasta, rice, or with a side of crusty bread to soak up the creamy sauce. Consider adding a fresh salad as a side for balance. Store leftovers in an airtight container for up to 3 days in the refrigerator.
