Ingredients
  

Main Ingredients

  • 2 cups chicken breast (cooked and shredded) Use rotisserie chicken for convenience.
  • 1 package gnocchi Frozen gnocchi can be used directly.
  • 4 cups chicken broth
  • 1 cup heavy cream Can substitute with half-and-half or coconut milk.
  • 1 cup spinach (fresh or frozen)
  • 1 cup onion (chopped)
  • 3 cloves garlic (minced)
  • 1 teaspoon Italian seasoning Adjust according to taste.
  • to taste Salt and pepper
  • to taste Olive oil For sautéing.

Instructions
 

Preparation

  • In a large pot, heat olive oil over medium heat and sauté onion until translucent.
  • Add garlic and sauté for an additional minute.

Cooking

  • Pour in the chicken broth and bring to a simmer.
  • Add the shredded chicken and gnocchi. Cook for 5-7 minutes until the gnocchi float to the top.
  • Stir in the heavy cream and spinach, and add Italian seasoning, salt, and pepper.
  • Let simmer for another 5 minutes until everything is heated through.

Serving

  • Serve warm in bowls garnished with fresh herbs, grated Parmesan cheese, or a drizzle of olive oil.

Notes

Store cooled soup in an airtight container in the refrigerator for up to 3 days. Store in the freezer, leaving out the cream until reheated to prevent separation.
