  • 1 lb 1 lb (450g) chicken breasts, diced Diced for quicker cooking.
  • 1 tablespoon 1 tablespoon olive oil For cooking the chicken.
  • 2 cloves 2 cloves garlic, minced Adds flavor.
  • 1 cup 1 cup risoni pasta Can substitute with small pasta.
  • 2 cups 2 cups chicken broth Or vegetable broth for a vegetarian option.
  • 1 cup 1 cup heavy cream For creaminess.
  • 1 cup 1 cup grated parmesan cheese For flavor and creaminess.
  • Salt and pepper to taste For seasoning.
  • Fresh parsley, chopped (for garnish) Adds freshness.

Cooking

  • Heat olive oil in a large skillet over medium heat.
  • Add the diced chicken to the skillet. Season with salt and pepper. Cook until browned and fully cooked, about 5-7 minutes.
  • Stir in the minced garlic and cook for an additional minute.
  • Add the risoni pasta to the skillet and mix well.
  • Pour in the chicken broth and bring to a gentle simmer. Cover the skillet and let it cook for 10-12 minutes, or until the risoni is tender.
  • Reduce the heat and stir in the heavy cream and parmesan cheese. Mix until creamy and well combined.
  • Taste and adjust seasoning if needed.
  • Garnish with fresh parsley before serving.

Notes

Serve hot with a green salad or garlic bread. For extra flavor, sprinkle more parmesan cheese on top before serving. Leftovers can be stored in an airtight container in the fridge for up to 3 days or frozen for a month.
