  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 piece onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme

Preparation

  • In a large pot, sauté the onion, garlic, carrots, and celery until softened.
  • Add the chicken breasts and chicken broth; bring to a boil.
  • Reduce heat and simmer until the chicken is cooked through.
  • Remove the chicken, shred it, and return it to the pot.
  • Stir in the heavy cream and thyme, and season with salt and pepper.
  • Simmer for an additional 5-10 minutes until heated through.
  • Garnish with fresh parsley before serving.

Notes

Store leftover soup in an airtight container in the refrigerator for 3 to 4 days. For freezing, it can last up to 3 months. Thaw in the refrigerator before reheating. Adjust the soup consistency by adding more broth or cream as needed.
