Ingredients
  

Base Ingredients

  • 2 tablespoons olive oil
  • 1 large onion (diced)
  • 3 cloves garlic (minced)
  • 6-8 cups chicken stock

Flavor Additions

  • 3 tablespoons tomato paste
  • 1/2 cup sun-dried tomatoes (chopped)
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes

Pasta and Cream

  • 8 ounces uncooked shell pasta
  • 1 cup heavy cream

Vegetables and Toppings

  • 2 cups cooked chicken (shredded)
  • 2 cups fresh spinach leaves
  • 1/4 cup grated parmesan cheese
  • 1/4 cup freshly chopped basil leaves
  • salt and pepper (to taste)

Instructions
 

Preparation

  • Heat the olive oil in a large pot over medium heat. Cook the onions and garlic for 5-6 minutes until softened.

Cooking

  • Add the chicken stock, tomato paste, sun-dried tomatoes, Italian seasoning, red pepper flakes, and pasta. Bring to a boil, then reduce to a simmer and cook for 10 minutes.
  • Stir in the heavy cream, chicken, and spinach leaves, and continue cooking until the spinach is wilted and the pasta is al dente.

Finishing

  • Remove from the heat and stir in the Parmesan cheese and basil leaves. Season with salt and black pepper to taste, and enjoy!

Notes

Serve in bowls with extra grated Parmesan cheese on top for added flavor. Pair with crusty bread for dipping. This soup can last for 3-4 days in the refrigerator, or you can freeze it without the pasta for longer storage.
