Main Ingredients

  • 1 teaspoon olive oil For cooking
  • 1-1 ½ pounds boneless skinless chicken breasts or thighs, diced into 1-inch pieces
  • 2 teaspoons Italian seasoning, divided Use 1 teaspoon for cooking the chicken and 1 teaspoon for soup
  • to taste Salt and pepper
  • ½ cup diced carrots
  • ½ cup diced celery
  • ½ cup diced onions
  • ¼ cup diced sundried tomatoes Optional, for flavor
  • 3 cloves garlic, minced
  • ¼ cup flour
  • 2 tablespoons tomato paste Optional
  • 6-8 cups chicken broth
  • 6 oz pasta Small pasta like macaroni or shells can also be used
  • 1 cup heavy whipping cream Can use low-fat cream or milk for a lighter version
  • ½-1 cup grated Parmesan Reggiano cheese Add according to taste
  • 2 ½-3 cups fresh spinach Adjust based on preference

Instructions
 

Preparation

  • Heat olive oil in a large pot over medium heat.
  • Add chicken pieces seasoned with salt, pepper, and 1 teaspoon of Italian seasoning. Cook until browned.
  • Remove the chicken and set it aside.

Cooking

  • In the same pot, add carrots, celery, onions, sundried tomatoes, and garlic. Sauté until softened.
  • Sprinkle flour over the vegetables and stir well to coat.
  • Stir in tomato paste, then gradually whisk in chicken broth.
  • Bring to a boil, then reduce heat and simmer until slightly thickened.
  • Add cooked chicken, pasta, heavy cream, and the remaining Italian seasoning.
  • Simmer until pasta is tender and soup is heated through.
  • Stir in Parmesan cheese and fresh spinach until cheese melts and spinach wilts.
  • Adjust seasoning with salt and pepper and serve hot.

Notes

Serve hot in bowls with crusty bread or a light salad. Garnish with extra Parmesan cheese or fresh herbs for added flavor. For extra flavor, use homemade chicken broth if possible. Feel free to add more vegetables like bell peppers or zucchini. If you like it spicy, add a pinch of red pepper flakes.
