Preparation

  • Prepare your ingredients by gathering everything in one place for convenience.
  • If using fresh potatoes, boil them until fork-tender, then mash with butter and cream until smooth. If you have leftovers, simply reheat them until warm.
  • In a large bowl, mix warm mashed potatoes with cheddar cheese, eggs, flour, salt, and pepper until well combined.
  • Scoop the mixture into golf ball-sized portions.

Cooking

  • Preheat your oven to 375°F (190°C) or heat oil in a deep fryer.
  • Bake the puffs for 20-25 minutes or fry them until golden brown and crispy.
